The Prophet ﷺ said: "Witr is a right upon every Muslim. Whoever wishes to pray 5 rakats, let him do so. Whoever wishes to pray 3, let him do so. Whoever wishes to pray 1, let him do so." — (Abu Dawud 1422)

Witr as 3 Rakats

Method 1 (Hanafi): Pray 3 rakats with one tashahhud — sitting at the end of all three rakats together, like Maghrib. Add qunut dua before ruku in the third rakat.
Method 2 (Shafi/Hanbali/Maliki): Pray 2 rakats and give salam. Then pray 1 rakat separately and give salam. This makes it clearly odd.
Both are valid. The Prophet practiced both at different times.

- 2nd rakat: Surah Al-Kafirun (109)

Witr as 1 Rakat

اللَّهُمَّ اهْدِنِي فِيمَنْ هَدَيْتَ وَعَافِنِي فِيمَنْ عَافَيْتَ وَتَوَلَّنِي فِيمَنْ تَوَلَّيْتَ وَبَارِكْ لِي فِيمَا أَعْطَيْتَ وَقِنِي شَرَّ مَا قَضَيْتَ
Allahumma ihdini fiman hadayt, wa 'afini fiman 'afayt, wa tawallani fiman tawallait, wa barik li fima a'tayt, wa qini sharra ma qadayt
"O Allah, guide me among those You have guided, pardon me among those You have pardoned, take care of me among those You have taken care of, bless me in what You have given me, and protect me from the evil of what You have decreed."

What if I already prayed witr and then want to pray more night prayers? Pray your additional rakats (nawafil), but do not add a second witr. The Prophet ﷺ said: "There is no witr twice in one night." (Abu Dawud 1439) Your night prayers are valid without a second witr.
